I don't think it's a matter of how violent something can be in a game. I'd say it depends more on how graphic the game displays it.

When I see graphic depictions of organs and such getting cut out it's too much for me

Hmmm, hard to say. I guess overly-bloody games that has lots of death and stuff. I probably could think of better, but as of right now, that's what I got lol :P

Some of the X-Ray moves made me "Oooooh" in an almost disgusted way.

Not so much that video in particular (cause everything is sped up from the "actual match" I saw last week) X-Ray moves fury at 1:00
