I'd love to learn how to play the guitar, but then what? It's not like I'll start a band or be in one, so it's just like a hobby that will get me nowhere.

If you're looking to learn an instrument and have a band, don't count on sax to do it for you in less than 2-3 years. You're just not going to pick it up and be able to play it well. That's what guitar and bass are for. china;

"Well" doesn't mean playing like Omar Rodriguez or some such guitar god. I've been playing bass for less than a year, and of course I can't do fancy slap-bass stuff or even complicated basslines, but for most bands my skill would get the job done. It's not rocket science.
And practically anyone can pick up a guitar and play power chords with a bit of guidance; doing fluid solos just take s a bit of practice and musical theory work. I'm not saying it's easy, but it's definitely a lot easier than any other instrument to play at a mediocre level.

I will also dare say that all members of the Magic Band were talented musicians who had a good deal of experience in other bands prior to being recruited by Beefheart.

The only instruments that are less hard than any others are the drums and the harmonica. Everyone knows this.
All others, whether it be Saxophone, Guitar, Bass, Violin, Piano, etc. all take a huge amount of skill to be truly good at. And no only physical skill, physical skill is only 1% of it. It's the intelligence to be able to make good music, and channel all your energy into the instrument while playing.
