A few days ago I was on IM with my english friend and he was talking to me about playing on the 'Mario Kart' with his friends and he was telling me how he 'sucked' at the game and he said that if I was there I would beat everyone because I am japanese. I laughed at this comment as I am not familiar with this western stereotype of japanese people with video game. Is this a real stereotype amongst western people? I would like something to confirm ^_^

That is true, a lot of elder japanese people hate gaijins. Especially people in america but I am fine with them but my granmother hate the souls of every american.

I can actually explain.
On Mario Kart Wii, players that are from Japan (via the World map when players are being selected) often have 2-3 star rankings. They're also in 9000+ scores for both battles and races.
I play Mario Kart Wii online almost every day, and it's yet to fail.
