Uh...I can't think of any bands that are particularly well-known for acoustic instrumentals. I can think of an acoustic instrumental or two, but not bands that only did those.

Snorkel

Calexico, on about half of their albums. It's awesome latin/western/jazz influenced stuff, largely without vocals. The albums Feast of Wire, The Black Light, and Hot Rail are all good.

It's not metal or anything, its just folk. Listen to it as background music and it'll grow on you.
