I think something is wrong with my bike

Guys, I tested my bike after the adjustment and now it's even worse

Just about every time I go up or down a hill, it sounds and feels like the chain went to a new gear automatically. The deal is, however, the gears on my bike are a Shimano 21-speed manual. Also, the changing gears doesn't really help me.  How do I fix this?

My friends bike did this, what you have to do is get a new bike, there is no solution. Actually there is one... don't ride up and down hills.

Why not? Is the gear dial going to break? Besides, I can go downhill just fine, as long as the path is even (i.e. sidewalk).
