It depends on the context. In the context we're talking about here it's just confusing to say "you".

I don't see how "you" in this case could be exchangeable with people

that is like me saying

"I didn't know you washed dishes"

but you are supposed to understand I am not talking about you but about people in general.

the only ones I have no experience in are doing household budget and doing taxes but I'm pretty sure I could figure out a budget pretty easily and muddle my way through taxes.

People makes sense there, but putting 'you' there when is talking directly to me makes it appear as if he is directing it to me. So that he is not just talking about the general population's ability to make motor bikes, but my personal ability.
