they somehow dodge an attack without rolling

they flash transparent white and you notice a slight twitch in the character model's position and it dodges anything for a split second

also how do i jump on people's heads

It's a sidestep... To perform one, you simply flick the analog stick downwards while shielding.

And I don't try jumping on people's heads, so I don't know

I'm pretty sure you jump on peoples heads when you press jump when you are near their head. It's pretty pointless as most of the time you will just get raped by their up smash.
