Just tell us why exactly you need Vista. Sure, the school says you need it, but MS Office isn't a necessity. magician;

Also:

QuoteSecurity
Windows Vista is engineered to be the most secure version of Windows yet. The new features in Windows Vista help to give you the control and confidence you need to get the most out of your PC.

Speech Recognition
Speech Recognition in Windows Vista empowers you to interact with your computer by voice. It allows you to significantly limit your use of mouse and keyboard while maintaining or increasing productivity. You can dictate documents and e-mail messages in mainstream applications, fill out forms on the web using voice commands, and seamlessly manage Windows Vista and applications by saying what you see.

Are those really things MS can brag about? psyduck;

If you need to run a certain application in Mac OS X like Office, you can use Parallels.

1: Office is available for OS X, also.
2: Free apps like NeoOffice allow documents to be saved in Office Formats.

...NeoOffice does everything Office does, and can save in 07 format. Anyways, there can't be much new aside from FRESH AND EXCITING POWERPOINT TEMPLATES AND EXTREME TEXT RENDERING.
