in this scenario, "independent california" has absolutely no access to us federal military infrastructure of any sort, and the us itself is entirely uninvolved in the issue

I don't think either would win really California's geography does not lend itself to being conquered quickly which I believe Canada would need to do to avoid loss by attrition. Canada is too large and I doubt many Californians would do very well in a Canadian winter leading to a similar issue of attrition.
If you put one army on a field against another I will give it to Canada as they have fought in World War conflicts as a united nation where California has not and likely would just give up to get Canadian health care
be sure to consider things like population, population density, gdp, the size of california's police force vs. the canadian military, gun ownership, canada's successes and failures in its historical military conflicts, technology levels, etc.

Canada would have a full airforce with jets and a navy at its disposal which California on its own does not possess. Actually come to think of it Canada could win simply by using incendiaries and targeting fresh water sources and power sources like the Hoover dam. California would be broken fairly easily
I would assume that the Californian military would have an equivalent military in most regards to the US, proportional in size to that of either California's proportion of the US population or that of it's current contribution to the US Military
it would be a logistical cluster fucker for both sides lol.

my instinct was to say that canada would win for about the same reasons
a large independent advanced country with proper armed forces vs. a newly independent state and its unified, militarized police force
and then canada (and its predecessor territories) has two centuries of military expertise behind it, fighting alongside the best of the best, with not a single loss in that time; while an independent california will have had no proper military experience whatsoever
canada, with the largest maritime border in the world, should naturally have an extremely well developed navy, right
geographically, it's sparse and frigid, so it would be very difficult to take over entirely, especially for arid desert folk like californians

Yes Canada would win. Canada also has large supplies of freshwater and oil, which California does not. They would be worn down
