if your budget is $3,500 damn I would set aside $1,500 for multiple high-end displays. what's leftover could easily build a machine better than you could possible need

ditch the single 2TB and go for 2x 1TB, reason being that i/o sucks on 2TB drives. also consider getting a spare to configure backup with

I'd go for this X79 mobo instead because who the fuck is ASRock. aesop rock?? http://www.newegg.com/Product/Product.aspx?Item=N82E16813131801 excellent performance-for-price CPU choice though. case, psu, and cooler all look good too.
with these choices you'd be spending a little more, but you could possibly save it by 'downgrading' the video cards to something just slightly less flashy. I don't know shit about video cards but do you really need dual $430 GPUs?
I'm actually looking to build a system almost identical to this later in the fall, including the i7-3930k and RAM surplus, so post some benchmakrs n_u
I'm gonna abuse and use the shit out of this PC with 3D Studio Max and Maya so I will need the extra GPU. I do agree with the 2 1 TB HDs, it's better to have two anyways. I dunno about the monitors, I hear great things about the Asus ones but I guess I might dish out a little more for the dells. I will switch out the RAM I guess, not that big of a deal. I will also change the Motherboard too, thanks for that. hocuspocus; I will need help from a friend to build this beast, I'll post pictures of it when it happens later this month.

Asrock is okay, but with a $3500 budget you can afford ASUS, EVGA, or MSI. Do it. Asrock is for when you have an $800 budget. That processor would cry in an Asrock. >.<
The gskill modules would have been fine, but Corsair is good too.
I would switch from a corsair PSU to Antec or Seasonic, but Corsair is okay. I would go with more than 750w with that CPU and the dual 7970s.
As far as my wishlist... All I really want is an SSD sometime soon. Here's what I currently have, minus my second monitor, which apparently isn't made anymore (it's a 19" Hanns G from 2008). http://pcpartpicker.com/p/evI2 As you can see what I have is pretty fucking good. The second monitor and the 250gb drive are from my 2008 build, the 500 gb drive was added in 2009, and the 2tb drive was added in early 2011, then everything else was added last summer, except the additional 8gb of memory that I added last december.

i don't think that 750w is going to do anything but waste power, his config shouldn't reasonably use more than 400-500w n_u
and corsair products are worth it for the velour sacks they come packaged in
Each of those GPUs pulls about 280w at max load. Under normal circumstances they'll only be pulling 100sh each, but you need to plan for the max, since they obviously will sometimes. 280x2 + 130 = 690 just in the GPUs and CPU alone.
idk I don't see the whole config drawing more than 750W under "max load"
i mean realistically it won't except during a stress test or something similar.
