Jailbreak it. There's a package you can install in Installer called "Apple screenshot enabler" and you can take screenshots by holding the home button and toggling the vibrate switch. The screenshots will appear in photos, and you can get them to your computer via SSH. It'll be a TIFF, but you can upload it to imageshack and imageshack will convert it to a PNG for you.
You can do it on the iPod touch, as well.
