It's been noted several times by iPhone users who use it overseas that you'll get an insane bill. If I remember correctly the best thing to do is to turn off EDGE whilst overseas.
Over 1000 is ridiculous.

It's only logical that a device that tries to load a web page like it would on a computer uses a shitload of data, and it's only logical to know that roaming costs a shitload.
It would've been cheaper to unlock the thing and use it on a European carrier.

I don't get why they offer BlackBerry users a $70/month plan for international data use, and I don't even get an offer for a plan halfway through the trip when my bill is going up. They didn't even call me to let me know how big my bill was getting... you can't say that AT&T aren't assholes, and also I didn't figure international data would be any more than it is on plans for other phones, which is like $.005/kb or something.
This makes all those, I'm in France threads priceless, well not for you, but for us at least.

The original plan sucks. I added 500 SMS, and it is very inexpensive for me. But The only reason I turned off Airplane mode in other countries is to get Wi-Fi. but during those time periods I did not get billed at all. Have no idea why.

No, when I was in Peru (before jailbreaking). I opened up my Settings and say that I was able to change my service. I didn't do it, but I was able to.
