I just installed Ubuntu 7.10 Gutsy Gibbon today, and I was looking up stuff about Compiz Fusion which is enabled by default in 7.10. I found some great videos on Youtube here.
I installed this awesome dock, that looks and acts just like OS X, and I think its even easier to use. Whenever you have two windows of the same app open, it shows both those windows, instead of just one like OS X does, making switching between windows really easy. And I can close an App, and it will stay close, no more right clicking the dock and selecting Quit. The only downfall is that its still an early build, and for some reason I can't just drag anything in there. I've only been successful in adding App Launchers in the dock, but I don't really need folders or documents. :P
The Dock is called Avant-Window-Navigator

also some people like to leave apps running without having a window open or cluttering up space somewhere else

Cubing on Beryl is also nifty due to the ability to hide porn easily.
