It's just one of those culinary terms where there's no strict definition.

Banana bread is technically a "quickbread" which is any bread leavened without yeast or eggs. It's such a broad term that it includes brioche, cake, scones, muffins, biscuits, cornbread, beer bread, and pancakes.

It's like all the shit that gets called a vegetable based on its culinary use despite being a fruit like tomatoes cucumbers and peppers. Or strawberries and raspberries not actually being berries. Or cheesecake being more of a custard pie.

Cakes are a type of quickbread but not all quickbread is cake. Definitely cake texture though.
